    Raaka Chocolate is located in Red Hook, a section of Brooklyn that, like many other parts of the borough, is experiencing a revival. Fittingly, Raaka founders Ryan and Nate—who blend traditional European chocolate making methods with an innovative and creative approach—chose in this reawakened, storied neighborhood an old, repurposed warehouse as their home: it is a physical reminder that Raaka’s chocolates are steeped in a studied respect of a time-honored craft, but driven by ingenuity and an independent outlook.

    It is a cold and rainy day when I make the trip to Brooklyn to visit Jessica Morelli, founder of Palermo Body. Wanting to witness her operation first-hand, and not wanting to interrupt her busy schedule, I made plans to meet her at her studio, a 230-square-foot space close to the Williamsburg Bridge that houses her entire operation. As soon as I enter the small, cozy space, the outside cold is swept away, replaced by bustling activity and the refreshing aroma of botanicals.
